Almond nutella 

The last post was about the benefits of cacao so today I want to share another recipe with one of my favourite ingredientes! 
We all know and love nutella, but has lots of refined sugars, palm oil (not fair trade) and the cacao is refined and lost its benefits, plus has dairy and as I wrote before, dairy inhibits the absorption of antioxidants. 


I want to share with you a super easy, healthy and delicious alternative! I live in south Mexico and here is not easy to find hazelnuts so I used almonds, but if you find hazelnuts will be even better!

Now let’s start! You can use the sweetener of your choice, also you can use more or less, just remember to not use lots of sugar since we want to keep this healthy! 

INGREDIENTES

about 2 cups 

20 minutes 

2 cups dry roasted almonds, salted

100 gr dark chocolate, chopped

4 tbsp coconut sugar 

1 tsp vanilla extract

2 tbsp coconut oil
DIRECTIONS 

1. Place the almonds in your food processor or high speed blender. Blend until the natural almond oils are released and becomes almond butter. Takes about 10min, remember to check the temperature of your blender, we don’t want to burn it! 

2. Add the cacao paste, coconut oil, vanilla and blend until mixed. 

3. Add the sugar and taste it (watch out since it’s hot!!). Add more if you like. 

4. Place it in a jar and enjoy! Last 2-3 weeks in a sealed container, you can also keep it frozen for a longer period.
