Gluten free vegan Apple pie

It’s almost Valentine’s Day!! I enjoy cooking for others, for me is a way to show love and care, and specially I enjoy desserts! 
I like to create healthy versions of the classics, that way you don’t feel you stoped eating the food you enjoy, as a general rule, if no one notices that is a healthy version then you have a winner! 
If you are starting the year with new habits and taking care of your weight BUT want to celebrate Valentine’s with dessert (what’s valentine’s without desserts?!?) then I’ve got the perfect pie for you! 
Plus… you really don’t want to feel bloated, full and sleepy on Valentine’s right? 

I used gluten free ingredients, I’m not celiac nor intolerant BUT I feel lighter when I’m off gluten, besides following an -almost- gluten free diet helps me to avoid buying pastries and snacks. 

I used a 9×9 pan but you can use a round pie plate or a muffin tray for individual pies. 

6-8 portions 

Pie crust 

1 cup chickpea flour 

1/2 cup coconut flour 

2 tbsp coconut sugar 

1/4 cup coconut or almond milk 

1/4 cup coconut oil 

1/4 tsp sea salt 

6 small apples 

1/2 cup water 

1/2 lemon juiced 

1/3 cup coconut sugar 

1/4 cup coconut oil 

1 cup oats 

1/2 cup oats 

1 tsp cinnamon 

1 tsp all spice or nutmeg 

1/4 tsp sea salt 
1. Set the oven at 350F and grease the pan with coconut oil. 

2. Mix the crust dry ingredients in a bowl. 

3. Add the milk, mix with a fork or by hand and add the coconut oil. 

4. Refrigerate for 15min and proceed to cover the pie pan, you can roll it or just press it with your hand. With a fork pinch the pie crust to prevent bubbles while cooking. 

5. Slice the apples (spiralizer, knife. Whatever floats your boat just try to slice it in similar pieces). 

6. Mix the water and lemon juice and drizzle over the apples. 

7. In a blender or food processor mix the rest of the ingredientes until you form a paste. 

8. Start by layering apples and the paste, mix a little by hand and do it until you finish the apples and paste. 

9. Sprinkle a little cinnamon and coconut sugar on top and put it in the oven. 

10. Bake for 40min. 

11. Serve it with vanilla ice cream.
